It's a well known symbol denoting how she's embraced lesbianism.  It
symbolized her rejection of all men along with her latest suitor.

And, if you notice, the sandwich was also Roast Beef on White bread. 
She's abandoning the killing of animals for the sake of human
consumption, and is now going to become a vegetarian.  A deconstruction
of the sandwhich's colors will actually demonstrate her to be embracing
Marxism as the only moral economic and philosophical system known to man.

Give her three years and she'll be department head somewhere.  I am
woman, hear me roar.
