I've never thought of it as anything overtly symbolic,
more closely related, if at all, to metonomy than
symbolism? I beleive, and this is me not someone who
wrote a thesis on the Hat, that it is just part of
Holden;  that it is used to give us another glimpse
at a piece of Him.  Personally i'd be surprised if
someone threw off a genuine explanation of the Hat as
a symbol.
The Hat is what You think it is even if it totally
opposite of whatever anybody has told or will tell
you even if that person is Salinger Himself.
