I thought the same thing - we discussed a little while back the
significance of Chicken in Salinger (I know, I know (: ) and we all came to
the conclusion via Bessie's bowls of chicken soup and Franny's untouched
chicken sandwiches - that it's generally a sign of healing and nurturing.
I've heard the story (which I'll admit is one of the most puzzling Nine
Stories I think but interesting because of that) describes as very postwar
and I guess that symbolises that - this image of hope and ressurection in a
garbage bin.

As for Franklin being (I quote) `like Holden ... bitter and depressed'. I
always get just a tad bitter and depressed myself when I see people
describing him like that. He's got a lot of life and humour and vitality
too, you know. Vitamin *is* his middle name (: When I hear people call him
twisted and sad it reminds me of how I felt when people were always telling
me how depressing and dark the lyrics of Morrissey and the Smiths were - I
thought `Well that must make me a sad, bitter mess myself because I
empathise with Morrisey totally - but I think he's hilarious!'
