She was his link to the more normal, less intelligent people in the world. In my mind, at least, that's why Seymour got so angry when he thought that lady in the elevator was staring at his feet. She was starting at the parts of his body that kept him well grounded. He thought that she thought (etc.) that she saw some sort of defect in his "down-to-earth-ness".
