A very fine textbook is by Madison Smartt Bell (a fiction writer of
some renown himself) called NARRATIVE DESIGN: WORKING WITH
IMAGINATION, CRAFT, AND FORM.

You can find it at this exceedingly long URL:

http://www.amazon.com/exec/obidos/tg/detail/-/0393320219/qid=1036170820/sr=1-2/ref=sr_1_2/103-9188679-2800635?v=glance

It is a series of stories by writers at many levels, each of which is
followed by a series of exercises. Bell puts great emphasis on
structure, reasoning that a writer's style will come as the story
emerges. It's quite a fine anthology and textbook, all in one.

You can also read a lot about the editor, Mr. Bell, at his web site.
Visit www.roughdraft.org and see the entry called "Writers and Other
Creative Spirits," which points to a handful of writers whose work, or
other material, appears on web sites. Some of his urban stories
(e.g., WAITING FOR THE END OF THE WORLD or STRAIGHT CUT) are
matchless.
